~ berry patch crumble ~

After a day of quilting I wanted to make a simple, elegant,  summery dessert using LOTS of different fruits. This little crumble recipe came together very nicely, with plenty of juicy syrup to pour over vanilla ice cream or gelato.

5 pink lady apples, cored and cubed

2 cups fresh blackberries

1 plum, cubed

juice and zest of one orange

2 teaspoons cornstarch

1/2 cup sugar

3/4 cup all-purpose flour

3/4 cup brown sugar

1 cup old fashioned rolled oats

1/2 cup sliced almonds

1/2 cup shredded, sweetened coconut

2 teaspoons cinnamon

1/2 teaspoon ginger

1 stick butter

Preheat oven to 325 degrees F. Mix apples, berries, plum, orange juice, orange zest and cornstarch. Spread into a 2 quart baking dish. In a separate bowl, combine sugars, flour, oats, almonds, coconut and spices. Cut in softened butter  until evenly distributed. Sprinkle over the fruit mixture. Bake for 50 minutes, or until golden, bubbly and fruit is tender. Serve warm with fresh whipped cream, ice cream, gelato or a drizzle of almond glaze.
